Summer is the perfect time to enjoy a nice salad in the sun, drinking a nice spritzer. Try out this delcious salad and keep that Summer body without losing all the yummy food!
2 lb (1 kg) mixed yellow squash and zucchini
11⁄2 Tbsp olive oil
Salt and freshly ground pepper
1⁄2 lb (250 g) orzo pasta
1⁄2 cup (21⁄2 oz/75 g) pine nuts
3 Tbsp fresh lemon juice
1 Tbsp champagne vinegar or white wine vinegar
3 Tbsp chopped fresh mint leaves
Parmesan cheese for shaving (optional)
Slice the squash and mix together with 1/2 Tbsp oil, salt, and pepper. Grill on the BBQ! Place in bowl.
In a pot of boiling, salted, water, add the orzo, and cook till al dente. Drain and rinse under cold water.
Meanwhile, toast the pine nuts until fragrant.
In the bowl, toss the squash, pine nuts, remaining oil, lemon juice, vinager, and toss to combine. Add salt and pepper for an extra kick and garnish with the mint and cheese if you're feeling wild.
Now enjoy this Summer salad outside with a lovely Iced Tea and a good book. :)
